OSHR 1039Complete your sourdough journey by learning the techniques and nuances of working with rye—a grain deeply rooted in European bread heritage. In this workshop, participants will explore advanced fermentation, learn how to balance acidity, and understand how rye dough behaves differently from wheat. Participants will prepare a rich, European-style rye sourdough bread with seeds and nuts, baked on a stone to create a deep crust and complex flavor. This class brings together everything learned, connecting technique, patience, and intuition. Participants will receive a refreshed starter, printed recipes, advanced fermentation notes, and a tools list, along with a loaf of artisan rye bread to bake at home. The workshop includes a tasting of rye breads. This course represents a final step into bread as tradition—something to enjoy, share, and pass on. Participants should bring a 3–4-quart mixing bowl.
